La Providencia is one of those food trucks that you always want to go to but never seem to get there. We were talking to our friend, Beverly. She said this place is a must and she really knows her street food. So we decided the next time we were in the neighborhood we would go there for lunch.
I love pupusas. I think I have been to all the food truck and restaurants in Santa Fe that have pupusas. Wow! These pupusas are incredible. They were still warm by the time I got home(that never happens). The pupuas are scratch made so it takes a little time, probably about 15 to 20 minutes. I came at lunchtime so there was a wait and a line. Next time I am phoning my order in advance. Now I know.
We had three vegetarian choices, frijoles, queso, and vegetables, spinach and cheese, and squash and cheese. We had 2 spinach and cheese and the squash and cheese pupusas. All these wonderful pupusas were 2.50 a piece.
I loved the cabbage slaw. It was bright and fresh. The slaw had jalapenos which really added some zip. The cabbage was crunchy,too.
At first, I thought that the sauce wasn’t very spicy. When I reached the bottom of the plastic bag, I found out that yes! this sauce had some good spice to it.
I am now kicking myself for not going to La Providencia earlier. This great place is open from 11-7 Tuesday-Sat. Yes, they are closed on Sunday and Monday. It is a very busy place.
