Ok, I have to start out with a disclaimer. Bo or Sasitorn Prakod lives about a block away from our house. We were excited to finally try her food truck. I had read many articles about her food truck like from the one featured in the Santa Fe New Mexican. These glowing reviews whetted my appetite for Bo’s Authentic Thai.
We started out with the Spring Rolls(4.95) that were five deep fried rolls with a delicious sauce.

We had the special of the day which was a Massaman Curry(12.95) which is a “Thai and Indian style yellow curry.” That is made with cardamon, cinnamon. cloves, star spice, cumin, bay leaves, and nutmeg. The Massaman Curry was served wiht potato, onions, carrots along with Jasmine rice. You could choose chicken, pork, veggies or tofu. For an upcharge of 2 dollars you could have beef.

Here is a close up of our curry on the delicious Jasime rice. The vegetables were perfectly cooked.

I chose the Green Curry(12.95) with coconut milk, bell peppers, carrot, green beans topped with Basil leaves and served over Jasmine Rice. Wow! I really enjoyed the vegetables. All the vegetables were perfectly cooked. They were nice and crunchy. There was enough rice to go with both dishes as well.

Bo’s Authentic Thai Food Truck is located at 502 Old Santa Fe Trail. Bo’s is located in the food truck park right across the street from Kaune’s Neighborhood Market or just south of the Roundhouse*(Our New Mexico State Capital).
