We hadn’t been to Cowgirl BBQ for about a year. I was very excited about their online menu which featured gluten-free, vegetarian, and vegan food. That was just so cool! I figured that the in house menu would be the same. I was sadly mistaken. Oh, well. Since I did remember one item that was vegetarian, I ordered that. The World Famous Butternut Squash Casserole(15.50) was that dish.
This casserole consisted of baked layers of butternut squash with caramelized onions, Jack cheese topped with bread crumbs. It looked and sounded delicious. This dish also came with a wonderful side salad. As you can see the squash casserole was squished between the toast points. I think that this casserole really needed some nice and hot green chile. I wanted something with a little more zip to it. The toast was a big surprise, I certainly wasn’t expecting that. I would have rather had a larger side salad. Speaking of side salads, I forgot how much I really enjoy Cowgirl’s salads. Just look at it
Ok, usually I don’t rave about a salad but this is the exception to the rule. I loved all the colors in my salad. That bright red pepper along with the carrot slices were very colorful. I also love the pepitas. They add a little something different to a salad. Yumm! Oh, and I almost forgot I received some excellent ranch dressing to drizzle on that fabulous, colorful salad.
I also liked our server he was very good. He gave us enough time to look at the menu and didn’t move us out of there quickly. We had a nice leisurely lunch with some friends who we hadn’t seen in awhile.

You can ordering online to take out. There is a Happy Hour Monday-Friday 3pm-6pm. Blue Plate Specials are also Monday through Friday until 4pm. Daily Beer specials are also available. Seasonal food specials can be had everyday. There is music at night and a pool hall.
