Thai Vegan is my favorite vegan restaurant in New Mexico. There used to be one in Santa Fe on Cerrillos Road but it turned into a Minerva Canna Dispensary. I thought that was very funny. Thai Vegan was also the first vegan restaurant I have ever been.
We always try to get one of the lunch combinations which are served from 11am-2:30pm. The lunch combo was an entree served with steamed brown rice, a spring roll, and a salad. You get your choice of tofu, soy chicken, pepper steak or soy fish. For a 2 dollar upcharge, you can get soy shrimp or soy chicken nuggets.
My friend said just ask for more veggies if you really don’t want any of the above. Since I love vegetables, I just order more vegetables. It works for me. I usually get the ld15 Spicy Noodles(Lunch). The spicy noodles were stir-fried flat noodles with fresh chili sauce, garlic, sweet basil, mushrooms, tomato, carrots, broccoli, and bell pepper. I’m getting hungry just looking at this combination plate.

If you look closely, you can see the chili flakes on the long flat noodles. Caution, this dish only gets hotter if you do not finish it in one setting.

I usually eat the spring rolls first because they were the hottest. The dipping sauces are so delicious and flavorful that I save some and put them on other food that I have in the house. Yes, they are that good.
This is the included salad. There are lots of interesting lettuces along with cucumber, red cabbage, a slice of tomato, and carrot slices. I save that for part of my meal for lunch the next day.

There is a great deal of food for 9.95. I always call ahead to pick up my take-out order. The service is prompt. I am sorry that I haven’t been back in a couple of years. That, my friends, is my loss.
